They're very easy to care for. Give him a secure hiding spot, feed him sinking foods (shrimp pellets are great) and when he molts, leave the shell in the tank - he will eat it and it's very healthy for them. Be careful if you want fish with him - even fast fish are at risk since he'll do his hunting at night, while fish rest.

Crawfish are scavengers. Sinking pellets (carniverous variety) from a pet store would be good. Just make sure the food gets to the bottom of the tank, that's where they like to eat. Small chunks of beefheart, shrimp, cod, or even lean chicken (occasionally) will all work as food. The stinkier it is, the more attracted your little guy will be to it. Keep his water clean, and I wouldn't recommend putting any fish in with him. They like to sneak up on sleeping fish and POW! you just fed your crawfish a $5 dinner!

Ive had alot of experience with crawfish ( I call them crayfish). Get a 10 gallon filter, feed him only a maximum of 3 shrimp pellets every 4 days, DO NOT PUT RAW SHRIMP IN TANK(so dont listen to Rob R., shrimp carry deseases fatal to crawfish), Put 2 or three live feeder fish fish every week or so , gat him a bubble maker to put oxygeg in the tank, and about 2-3 hiding places. If you evr think of getting another crawfish get a 20 gallon( for best results get a 30gallon) and 5 hiding places. Remember this rule, it applies to most species of crawfish: 1crayfish per 10 gallons. If he molts(shed off his shell) he will get bigger and lost limbs will start to regenerate, leave the molt in there so he can eat it and regain calcium from the molt to harden his shell(do not touch it after it molts, its body is fragile at that time.
